During the 16th century, many artisans (and chefs in that number) were executed or imprisoned. They hid in monasteries and wore robes and hats. This is the prototype of the hat, one legend says. But this item, whether a flared toque or skull cap, is not just a hat. It shows status, knowledge, authority, or ability. There are demi, senior, and sous chefs, and kitchen staff. Plus illegal restaurants. No restaurant can operate without them and make good profits. The reason is that they are cheap, never complain, and work hard. Good chefs often rely on them. And chefs are hard working too. The hat they wear won’t tell you that they work 60 to 80 hours a week. And many chefs work during the weekend and on holidays.
